Lazy Sunday

I know I should be outside enjoying the sunny and 70 degree weather since its been freezing the last few days, but alas I'm inside the confines of my apartment doing what's best on a Sunday.....being lazy. I had some work I needed to do this weekend so I saved it for today and have been spending quality time in Excel, but decided to take a little break and make a yummy Sunday lunch.

I made sour cream chicken, which is a family favorite my Mom makes often, but certainly not for those on a health kick. As a side I sauteed zucchini with onion powder and the meal turned out great. I also decided I needed dessert to go along with my Sunday lunch and over the weekend bought an angel food cake so I had that with strawberries and whip cream. I've actually been munching on this combo all weekend. I need to go to the gym.

Back to work!

Sour Cream Chicken, Zuchinni and Salad
(the chicken looks like a big mess, but its SO good)
The angel food cake didn't last for a photo

Sour Cream Chicken
6 chicken breasts
1 stick of butter - melted
1 8oz. carton of sour cream
1 can cream of chicken soup
Ritz crackers
In a baking dish salt, pepper and paprika the chicken. Mix the sour cream and cream of chicken soup together and then spoon over the chicken and spread evenly. Crush enough Ritz crackers to cover the top completely. Pour the melted butter over the top. Bake at 350 degrees for 1 hour.

Dream Job

My friend Natalie's blog post today is about what your dream job would be so as of late my current dream job is to be a cake decorator at Charm City Cakes, which is the bakery on Food TV's Ace of Cakes.

I love this show and can't get enough. Luckily its on the Food Network quite often so I can always get my fill plus I DVR it. They create some of the coolest and most original cakes I've ever laid my sweets loving eyes on. Now I could never afford one on my own given that they start in the $1,000 range (EEK!) so the next best thing is to work there. Below is a cake of the Hogwarts castle from Harry Potter.

Could it really be a cake??

Happy St. Patrick's Day

St. Patrick's Day is by far my favorite in Dallas. The city actually brings out the big ones for this day and has such great festivities the Saturday prior. All along Greenville Avenue the party can be seen. From the parade to the block party its definitely a day you don't want to miss.

Normally the weather is awesome and its one of those great spring days you can bust our your summer gear; however, that was not the case this year. Last week it dropped from 75 to 45 and rained for days so my fear was that all the events would be cancelled. Luckily and how ironic the rain cleared out and while it was still chilly it was loads of fun!

We started the day off by having a breakfast and mimosas followed by a few mid-morning drinking games. Once the sun started to poke through the clouds we proceeded to another friend's house who was having a party and enjoyed magic punch and lizard drinks. Once under the spell of the magic punch we walked over to the block party for more St. Patty Day action. We moved back to the house to watch Baylor play in the Big 12 championship and while they didn't win I did get in a good nap to pick back up where I left off. All in all it was an awesome day and I had such a great time with all my friends!

Pipa's Birthday Weekend

I'm crazy behind on blog posts so here are a couple.

At the end of February my family made our annual trek to Hobbs, NM where all my Mom's family lives for my Grandpa's birthday. Every year we gather to celebrate this sweet man and catch up with family. This year was his 89th birthday, but he says he's ready for his 90th. He promises for a wild and crazy party and I'm looking forward to it.

My cousin Haley made a great meal for everyone (bless her!) and my Mom made some delicious cakes for dessert. It was so great to see everyone and all the great grandkids are growing like weeds. Since this is the one time we all come together its the perfect photo opportunity so we basically put Pipa in a chair and gather around him every which way for every kind of picture scenario you can imagine. First one of the kids, then the grandkids, then the great grandkids and so on. My sister and I particulary enjoyed the one of the grandkids and their spouses. We are the only ones not married so we were entitled Laverne and Shirley. How special!

Happy Birthday Pipa!

The great grankids with Pipa - these pictures with the young ones are not easy to master

My cousin Shad made a beautiful family tree of Pipa and my grandmother Nana's family

All the grandkiddos - a fun fact my sister (the blonde at the end) is the oldest and I'm the youngest so we are often referred to as the bookends of the grandkids
